AMERICAN BLUEBERRY PANCAKES
Light, fluffy and fruity, these pancakes are a US classic. Serve them stacked high with syrup and extra fruit.
Ingredients
Makes 10 pancakes
- 200g self-raising flour
- 1 tsp baking powder
- 1 egg
- 300ml milk
- Butter
- 150g pack blueberry
- Sunflower oil or a little butter for cooking
- Golden or maple syrup

- Mix together 200g of self-raising flour, 1 tsp baking powder and a pinch of salt in a large bowl.
- Beat 1 egg with 300ml milk, make a well in the centre of the dry ingredients and whisk in the milk to make a thick smooth batter.
- Beat in a knob of melted butter, and gently stir in half of the 150g pack of blueberries
- Heat a teaspoon of sunflower oil or butter in a large non-stick frying pan
- Drop a large tablespoon of the batter per pancake into the pan to make pancakes about 7.5cm across, making three or four pancakes at a time
- Cook for about 3 minutes over a medium heat until small bubbles appear on the surface of each pancake, then turn and cook another 2-3 minutes until golden
- Cover with kitchen paper to keep warm while you use up the rest of the batter
- Serve with golden or maple syrup and the rest of the blueberries
CHOCOLATE & BANANA FRENCH TOAST
An indulgent treat for when you're in need of a sweet fix - chocolate and banana sandwiched in fried bread.
Ingredients
Serves 2
- 1 ripe banana
- 75g milk chocolate, chopped
- 4 slices crusty white bread from a round loaf
- 3 medium eggs
- 1 tbsp double cream
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 25g unsalted butter
- Ground cinnamon, to serve
- Icing sugar or extra maple syrup, to serve (optional)

- Slice the banana into a small bowl and mash using a fork. Add the chopped chocolate and mix to combine
- Lay 2 slices of bread on the work surface. Divide the chocolate and banana mixture between them, spreading almost to the edges
- Top each with a second slice of bread and press together to make a sandwich
- In a shallow dish, whisk together the eggs, double cream, maple syrup and vanilla extract. Melt the butter in a large frying pan over a medium heat
- Lay one sandwich into the egg mixture to coat one side, then carefully flip it over so that both sides of the sandwich are soaked in the egg
- Lower the sandwich into the hot frying pan and cook for about 1 min on each side, until golden brown and the chocolate has started to melt
- Repeat with the second sandwich
- Cut the sandwiches in half to serve and sprinkle with a little ground cinnamon and either icing sugar or extra maple syrup if you’re feeling super-indulgent!
FRIED EGG FLORENTINE TOAST
A fantastic toastie that makes a great breakfast or brunch treat - no need to bother with Hollandaise sauce.
Ingredients

- 2 slices of white bread
- Knob of butter
- 25g cheddar, grated
- Small handful baby spinach
- 1 tbsp olive oil
- 1 medium egg
- Sriracha hot sauce, to serve
- Extra spinach or watercress, to serve

- Remove the centre of both slices of bread with the rim of a drinking glass or a cookie cutter
- Spread each slice with a little butter and top both with the cheddar and torn spinach leaves – pack as much cheese and spinach on as you can
- Heat a large non-stick pan over a medium heat and drizzle in the oil
- Once the pan is hot, sandwich the bread together, place in the pan and press down to brown
- Cook for 4-5 mins on a medium heat until the cheese begins to melt
- Flip the sandwich over and crack the egg into the hole in the middle. Cover the pan with a lid to cook the egg through for 3-4 mins
- Transfer to a plate, drizzle over some sriracha and serve with spinach or watercress on the side
AVOCADO & FETA TOAST
This combination of creamy avocado, salty feta and a hint is worth getting up for!

- 50g feta
- 1 tsp chilli flakes
- Juice ½ lemon
- 2 slices of sourdough

- In a small bowl, mash the avocado, feta, chilli flakes and lemon juice, and season well with black pepper
- Toast the bread
- Pile the avocado and feta on the toast
ACAI BOWL
Try this fruity breakfast smoothie bowl for a quick, easy start to your day. Vary toppings according to the season – fresh berries or peaches work well in summer

- 2 tsp açaí powder
- Handful frozen berries
- ½ a very ripe banana, chopped
- Handful ice cubes
- 1 tsp coconut flakes, 5 pineapple chunks, ½ passionfruit, 1 tbsp toasted oats, to top (optional)
